Meal Recipe: Marinated beef tenderloin, seasoned baked potatoes, & salad

Never did I imagine I’d be sharing recipes on my blog, yet here we are! ;)

We enjoyed this delicious meal this past Monday for lunch. It’s a marinated beef tenderloin steak, seasoned baked potato strips, and a simple spring mix salad. My salad base is usually the same: any salad mix tossed with lemon juice, olive oil, salt and pepper–and then I add whatever else I may have on hand. For this one, I added some beets and diced apples.

My toddler was really the mastermind behind the deliciousness. She helped create the seasoning mix. ;)

While I didn’t measure out any ingredients for myself, I did list measurements for beginning cooks who need exact instructions (like I used to need). I’m lookin’ out for you! But really, just toss as much or as little of whatever you have and have fun with it.

Beef Tenderloin Steak in Marinade

Ingredients
  • 2 beef tenderloin steaks (about 4 ounces each)
  • 2-3 sprigs finely chopped rosemary
  • 1/4 teaspoon fresh chopped ginger (or ginger paste)
  • 1 clove fresh minced garlic (or 1 teaspoon garlic powder)
  • 1 teaspoon onion powder
  • 1/4 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1/4 teaspoon thyme
  • 1/4 teaspoon mint
  • 1/4 cup lemon juice
  • 1 tablespoon coconut aminos
  • Olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter (optional)
Instructions
  1. Combine all the seasonings together (from the rosemary to the coconut aminos) in a medium bowl.
  2. Add the steaks to the bowl allowing the marinade to completely cover the meat and let sit for a few minutes.
  3. While the steaks marinade, heat a pan on medium heat with a drizzle of olive oil and butter.
  4. Once the butter is melted (or oil is heated) add the steaks and marinade to the pan. Cook steaks for about 5-7 minutes per side, depending on desired doneness or thickness.
  5. Remove from pan, allow meat to rest a few minutes, then cut, serve, and enjoy!

If the ingredients for the potato seasonings look familiar, it’s because they’re exactly the same as for the steak recipe! I just used enough of the mix to coat the potatoes first, before adding the lemon juice and coconut aminos, then used the rest for the meat marinade. I just wanted to be able to save it on it’s own in case anyone was looking at just one recipe or the other.

Seasoned Baked Potato Strips

Ingredients
  • 1 large potato (or two medium potatoes)
  • 2-3 sprigs finely chopped rosemary
  • 1/4 teaspoon fresh chopped ginger (or ginger paste)
  • 1 clove fresh minced garlic (or 1 teaspoon garlic powder)
  • 1 teaspoon onion powder
  • 1/4 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1/4 teaspoon thyme
  • 1/4 teaspoon mint
  • Olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat your oven to 400 degrees F.
  2. Meanwhile, cut your potato in half across the shorter side, then cut each in half lengthwise. Cut each of those pieces again lengthwise to about a 1/4 inch thick strips.
  3. Combine all the seasonings (from the rosemary to the mint) in a medium bowl.
  4. Grease a shallow oven dish with the olive oil and place the potato strips on the dish. Sprinkle the seasoning mix over the potatoes, or toss and coat the potatoes in the seasoning mix bowl then place on baking dish.
  5. Bake potatoes for about 30-40 minutes, turning them over once after about 15 minutes. Add more time if you prefer them crispier.
  6. Remove from oven, serve, and enjoy!

As I mentioned in this Instagram post, I never really considered myself a cook until recently. I used to make whatever was easiest and quick that I could pretty much just pop into the microwave, most of which was unhealthy. Growing up I always seemed to have someone willing to cook for me so I hardly even tried to cook. My husband enjoys cooking, trying out new recipes, and he’s great at it so I really didn’t need to learn to cook. Whenever I did try, I would second guess what I was doing if what I was cooking didn’t look like it should before it was even done. It was such a disaster and I would get discouraged to try again. Having failed more times than not made me hate cooking. I even hated food prepping, such as peeling and cutting up veggies, which is funny to me because now it’s one of my favorite parts of cooking. I get lost in thought in the zen of it.

While I’m not making 5-star meals, I have come such a long way!

I wanted to eat healthier, lose the pesky weight I’d gained, feel better, and be able to make good food for my daughter. I also knew I wanted to focus on primal/paleo meals since I first started reading about it some years ago after my dad-in-law introduced me to The Primal Blueprint book and Mark’s Daily Apple site (both by Mark Sisson). I aspired so much to one day be one of the success stories featured on Mark’s website because every story I read made me feel like it was a possibility for me to achieve the positive results I wanted.

I wasn’t sure where to start but thanks to Kelli’s YouTube channel (ItsJustKelli) and watching several of her videos where she raved about the Hello Fresh meal subscription service, plus she had a discount code, I went ahead and tried it out.

Hello Fresh helped me learn cooking techniques with their easy prepping and cooking instructions. I’d recommend it if you want to learn to cook in the comfort of your own home but beware of the excess and wasteful packaging that comes with each shipment. Also, recipes can get repetitive after a couple of months but it’s nice to have the recipe cards that come with each meal for when you want to recreate a recipe.
